CATERING
At HMP Altcourse the catering is provided by ARAMARK
LTD one of the largest service management organisations in the
world. The company was founded in the USA in 1959 and has been operating
in Britain since 1972. |

The catering department is required to provide meals 3 times daily
for prisoners and lunch and hospitality in the staff restaurant from
7 days a week. The menu rotates on a four weekly basis and is ordered
via a weekly pre-select system with the food then being delivered
to the Units by a hot trolley system. |
Investors In People
In January 2002 Aramark Ltd successfully achieved an Investors
in People Award for the team working at HMP Altcourse.
The Investors
in People award is a significant achievement for all establishments.
Within HMP Altcourse two awards have been made in under a year.

Training opportunities
Safety and hygiene are of paramount importance when working with food,
and at HMP Altcourse we ensure all prisoners receive a range of training
opportunities. Aramark staff provides prisoners with vigorous training,
which is refreshed on a regular basis. As a prisoner moves from one
area to another he will receive the appropriate training some examples
of training include: |
- Safe food handling
- Equipment use
- Safe knife drill
- Reporting of defects
- Reporting sickness and accidents
- Fire procedures
- Control of substances hazardous to health regulations
- Menu planning
- Manual Handling

In line with HMP Altcourse commitment to providing prisoners with
training opportunities Aramark offers NVQ's in Catering and Hospitality,
this includes such skills as:
- Health & Hygiene (Basic) certification
- Aramark 5 star Hygiene certification
- NVQ Level 1 & 2 food preparation & cooking
- NVQ Level 1 & 2 food & drink service
- NVQ Level 1 kitchen portering
- NVQ Level 2 unit accreditation in store keeping
- CIEH foundation certificate in basic food hygiene
- Unit Accreditation certificate
- Opportunity to enter salon culinary - Aramark

| DIET |
At HMP Altcourse a pre-select menu system is operated, in which all
dietary, ethnic and healthy option needs are catered for. We are also
tasked to provide special diets as prescribed by the Prison doctor.
The following staff training is also completed on site:
- NVQ Level 2 food preparation and cooking
- D32 Level 3 vocational assessors award
- Intermediate food hygiene certificate
- Instructional techniques
